I was reading through my book “China Bayles’ Book of Days” by Susan Wittig Albert and came on an interesting recipe (see the books page for a link). China Bayles is a herbalist who solves murder mysteries which have a connection with herbs. June 18th had a recipe for Lemon Butter for which I seemed to have grown most of the ingredients.
I had ripe lemons on my lemon tree, and I had lemon thyme, lemon balm, lemon grass and lemon verbena. Bingo!
The recipe is:
1 cup of unsalted butter, softened
1/4 cup fresh lemon juice
2 tbsp powdered sugar
grated peel of 1 lemon
3-4 tbsp of very finely minced leaves of any of the lemon herbs
Combine all ingredients and puree until smooth. Cover, refrigerate until firm.
We tried it on some homemade bread and it was very pleasantly lemony, slightly sweet and felt like a treat.
